Minestrone Soup

Little Leo isn't feeling well at the minute, so I made him a soup for lunch. I don't usually do soups as I find the shop bought ones are usually perfectly ok. Made an exception today and we were all pleased with the results.

You need:

1/4 of a Savoy Cabbage - shredded
2 Cloves of Garlic - crushed
3 Carrots- roughly chopped
1 Onion - roughly chopped
4 Celery Stalks - roughly chopped
1 400g Tin Chopped Tomatoes
1 400g Tin Butter Beans (or any other bean of your choice)
3.5 pints Vegetable Stock
2 Tablespoons Olive Oil
2 Tablespoons Tomato Puree
2 Large Potatoes (cut into small dice)
140g Spaghetti (broken into small pieces) or any other small pasta shape....
salt and pepper to taste

Place the Onion, Carrots and Celery in a food processor and whizz them until they are chopped into small pieces. Heat the Oil in a large pan then add the Vegetables, Potatoes and Garlic. Fry for 5 mins or so over a medium heat until they soften.

Add the Tomato Puree, Stock and tinned Tomatoes. Bring to the boil, then simmer with a lid on for 10 minutes

Add the Beans and the Pasta, then cook for further 10 minutes. Then add the shredded Cabbage for a final 2 minutes. Season to taste. Serve with fresh Crusty Bread.





Serves 4 easily
