Tequila Lime Chicken


This is a great recipe for the BBQ - can't believe i'm saying that in the middle of January, but there you go. You can also roast the Chicken as i did here. I really like anything citrusy, and the lime in this recipe gives it a quite unique taste.







You need:
4 Chicken Thighs
4 Chicken Breasts or Drumsticks
1/4 cup Tequila
1/4 cup Olive oil
2 teaspoons Salt
1/2 teaspoon Black Pepper
4 Garlic cloves - crushed
1 Onion - finely chopped
1/4 teaspoon Dried or Fresh Thyme
1/2 teaspoon Ground Cumin
1/2 teaspoon Paprika
1 bunch fresh Coriander - chopped
3 Limes - Juiced

Place the Chicken in a large mixing bowl.

Add the Olive oil, Tequila, Garlic, Onion, Thyme, Cumin, Paprika, Coriander, Salt and Pepper.

Pour the Lime juice over the Chicken and mix well. Marinate for at least an hour in the fridge.

To BBQ: Place Chicken on the BBQ and cook until done

To Roast: Place the Chicken in a roasting dish and roast for 45 minutes to one hour.

Serve with salads, coleslaw, jacket potatoes, or pretty much anything you like. I served mine with Mexican Style Rice
