Lemon and Lime Bread Pudding


Another recipe using citrus ingredients and another variation on the Bread Pudding theme...this turned out really well and I'll definitely be making this again.







You need:

2 cups Milk
1/2 cup Brown Sugar
1/3 cup Sugar
1 teaspoon Vanilla Extract
1/4 teaspoon ground Cinnamon
3 Egg Whites
1 Whole Egg
1 Lemon - juiced
120ml Lime Juice (approx 4/5 Limes
250g French Bread - stale and cut into bite sized pieces
Zest of 2 Limes
300ml Whipping Cream
1 tablespoon Butter (to grease dish)

Combine first 9 ingredients in a large bowl, along with the Zest of 1 Lime. Whisk everything together until well combined. Add the Bread and stir gently. Let the mixture stand for 1 hour.

Meanwhile, pre-heat the oven to 180c

Pour the mixture into a large, buttered baking dish

Bake for 30 - 40 minutes or until pudding is set.

Whisk the cream together with the zest of 1 Lime and a teaspoon or two of left over Lime Juice, serve the pudding with a big dollop of the Lime Flavour Cream
