Tomato Risotto
This one couldn't be easier...a one pot, microwave Risotto that is ready in no time at all.
You need:
250g Risotto rice
50g Butter
1 Onion - finely chopped
500ml of Passata
250ml Vegetable Stock
500g Cherry Tomatoes
100g Mozzarella - cut or broken into chunks
Parmesan to serve
Salt and Black Pepper
Place the Rice, Onion and half the Butter into a large microwave proof bowl. Cover and cook in the microwave oven on high, for 3 minutes. Stir in the Passata and the Stock, then cook uncovered, for a further 10 minutes
Stir well, then add the Mozzarrella and the Tomatoes, then cook on high for a further 8 minutes. The rice should now be cooked and the Tomatoes nice and soft.
Let it stand for 2 minutes, then stir in the remaining Butter and Salt and Pepper to taste. Serve with Parmesan scattered on top.
