Pasta Genovese


This one couldn't be easier. You can make it in one pan to save washing up, and you can use any pasta you have available.








You need:

300g New Potatoes - sliced to the thickness of a pound coin
300g Pasta - I used Penne, but Spaghetti would be good
200g Green Beans - top and tailed
120g Green Pesto

Bring a large pan of water to the boil and then add the Potatoes and the Pasta. Cook for about 8 minutes and then add the Beans. Cook for a further 3 or 4 minutes until the Pasta and Potatoes are just done.

Drain well and then return the Pasta, Potatoes and Beans to the cooking pan. Stir in the Pesto and mix well. Season to taste and serve with Salad or Bread
