Prawn Pilau

Another easy to make, low fat dish.

You need:

2 Tablespoons Curry Paste - I used Korma, from a previous dish
1 Small onion (very finely chopped)
300g Basmati Rice
700ml Stock (Vegetable or Chicken)
150g of cooked, peeled Prawns
1 Cup of Frozen Peas
1 Red Chilli (sliced into rings)
Handful of chopped Coriander

Over a gentle heat, fry the Onion with the Curry Paste for 5 minutes. Add the Rice and stir well to ensure all the grains are coated with the Curry Paste. Add the Stock and bring to the boil. Cover and simmer for 15 minutes

Turn off the heat and stir in the Peas, the Prawns and the Chilli. Cover again and leave to stand for a further 5 or 6 minutes.

Fluff up the rice with a fork and serve with the Coriander scattered on top.
