Apple Pear and Ginger Crumble


Another slightly healthier dish....You can get the Stem Ginger in most supermarkets. For the benefit of the Polish girl in my local ASDA who I asked to find it for me, it doesn't live on the same shelf as all the pickles....






You need:

400g Bramley Apple - Peeled, cored and sliced
400g Pears - Peeled, cored, sliced
1 chunk Stem Ginger in syrup, - chopped
1 tablespoon of the syrup from the Stem Ginger jar
200ml Apple Juice
100g Plain Wholemeal Flour
100g Wholewheat Muesli
3 tablespoons light Muscavado Sugar
85g Low fat (olive oil) spread - chilled

Turn the oven on to 190c. Put the Apples and Pears into a 1.5 litre baking dish and pour over the Apple Juice. Add the Ginger and the Syrup and mix everything together well.

Now tip the Flour into a large bowl and add the low fat spread. Using your hands, rub the spread into the Flour until it is well mixed. Now stir in the Muesli and the Sugar. Scatter this topping over the top of the Apples and Pears.

Bake in the oven for approx 40 mins until golden and crunchy. Serve with low fat (or not) Custard, Ice Cream or Yogurt.
