Pork Casserole with Green Vegetables

A good meal for this time of year, now that it's getting darker and colder outside!

You will need:

1kg Pork (diced in one inch cubes)
150g Mangetout (chopped in half)
150g Green Beans (chopped in half)
2 Medium Eating Apples
1-2 teaspoons Cider Vinegar
salt and pepper
300ml Chicken Stock
275ml Dry Cider - Strongbow is good!
1 tablespoon Plain Flour
1 medium Onion (chopped)
3 tablespoons Olive Oil

Heat half the oil in a large casserole or heavy based frying pan and brown the pork in batches over a medium heat. Put it to one side

Lower the heat and add the Onion to the pan. Cook on a gentle heat for approx 5 minutes until softened. Stir in the flour and cook for approx 1 minute, then add the Cider and keep stirring until smooth. Bring to the boil and reduce by two thirds to concentrate the flavor.

Now add the Pork and the Onion mixture to a large casserole dish and cover. Cook in the oven at 180/Mark 4 for approx 2 to 2/12 hours until the Pork is very tender.


Meanwhile.....quarter and core the Apples, then cut into wedges. No need to remove the peel.

Heat a little Oil in a pan and fry the Apples until they are lightly browned. Set them aside






Now cook the Mangetout and Green Beans in boiling salted water for approx 3 or 4 minutes. Drain them and rinse them in cold water to stop the cooking process. Set them aside.

Approx 5 mins before the end of the cooking time, add the Vegetables and Apples to the casserole, along with the Cider Vinegar to taste.




Serve with Roast or Mashed Spuds.

Makes enough for 4 people
