
You need:
3 Medium Eggs (free range)
Grated Zest and Juice of 2 Lemons
115g Butter - melted
150g Caster Sugar
25g Plain Flour
10g Cornflour
Pre-heat the oven to 180c. In a large bowl, mix together all the ingredients and beat well until smooth.
Pour the mixture into your ready made pie case and then bake in the oven for 15 mins until the tart has set. Remove from the oven and allow it to cool down for 15 mins.
Serve warm or cold with a big splodge of Creme Fraiche on the side. How easy is that?
