Blackberry and Apple Fool


I think i'm addicted...I can't walk past a blackberry bush without wanting to pick all the fruit. We've got a freezer full of crumbles, a cupboard full of jams and we still went out today and picked a load more. Made this pudding tonight, to use up some left overs.










You need:

300g Blackberries
125g Sugar
2 teaspoons Vanilla Essence
90g Apple Puree - I used one of those sachets designed for kids lunchboxes (Del Monte Fruitini)
142 ml Double Cream


Put the Blackberries in a pan and add enough water to just cover them. Bring slowly to the boil and simmer for approx 15 mins until the water has reduced by half.

Add the Sugar and the Vanilla Essense and simmer until the Sugar has dissolved. Now pour the berries into a sieve. Using the back of a ladle, push the berries through the sieve to capture all the juice. Discard the pips that are left behind. Return the juice to the pan and simmer for another 15 mins or so, to reduce it by half again. You will be left with an intensely flavoured syrup.

Whip the Cream until it forms soft peaks.

In a bowl or glass, add a layer of the Blackberry syrup, followed by a layer of Cream, followed by a layer of Apple puree. Repeat the layers again until everything is used up, or the bowl is full!

This is just turning rude... I offered coffee in exchange for the last blackberry offering and got nothing. Now you got more blackberry goodness and nothing is coming my way. Tsk, tsk, tsk. What's a boy to do to get some blackberry action around here ;)))
