Pasta with Salmon and Creme Fraiche
A nice, quick and easy recipe this one...only takes 10 minutes from start to finish.
You need:
200g Fresh Pasta - Penne/Rigatoni or whatever you fancy
1 Red Onion - finely chopped
125ml Reduced Fat Creme Fraiche
2 Salmon Fillets - boneless, skinless. Chop into bite sized cubes
2 tablespoons Olive Oil
1 Clove Garlic - crushed
1 tablespoon Fresh Parsley - chopped
Cook the Pasta according to the instructions. If using fresh pasta, this should just be a matter of adding it to boiling water for 4-5 minutes. If using dried, maybe 10-12 mins.
While the pasta is cooking, heat the oil in a pan and add the Onion and Garlic. Cook for 2-3 minutes until softened but not coloured. Add the Salmon and the Creme Fraiche and cook for no more than 5 minutes, until the Salmon is cooked through.
Drain the Pasta and add to the pan with the Salmon. Stir in the chopped Parsley and serve.
