Melon and Rum Jam

A slightly different jam that you probably haven't tasted before!

You need:

450g Melon - weight when peeled and de-seeded
4 tablespoons Lemon Juice
450g Sugar
1 and a half tablespoons rum

Halve the melon and cut away the skin, before scooping out the seeds. Cut the flesh into 1 cm dice. Put into a preserving pan or large saucepan, with half the Lemon Juice and then simmer gently until soft.

Mash with a potato masher to make the pulp smooth, then add the rest of the sugar and the rest of the lemon juice.

Stir and heat gently until the sugar is dissolved, then bring to a rapid boil and add the Rum...Boil until setting point is reached.

Spoon into warm, sterilised jars and seal.

This makes approx 1lb of Jam.
