Winter Soup


Another good soup for this time of year and another good way of cramming in at least a couple of portions of the recommended 5 a day......You can make this vegetarian just by leaving out the bacon. The soup can be frozen and the recipe is easily halved or doubled.






You need:

1 Onion (chopped)
150g Streaky Bacon (chopped/diced)
2 medium Carrots (1 finely diced, 1 roughly chopped)
2 sticks Celery (chopped)
2 tablespoons Olive Oil
1 Potato (diced)
2 cloves of Garlic (crushed)
400g tin of Chopped Tomatoes
1 litre Vegetable Stock
400g tin Beans - I used Haricot beans (not baked beans!)
1/2 small Savoy Cabbage (finely shredded)
1 teaspoon Dried Sage
Handful of fresh Parsley (chopped)
Handful of Green Beans (chopped into 1cm chunks)
salt and pepper to taste

Fry the Onion and the Bacon together in the Olive Oil, over a medium heat. When the Bacon starts to crisp and the Onions begin to brown (after approx 5 mins), add the Carrots, the Potato, the Celery and the Garlic. Stir well and cook for a further 2 or 3 minutes.

Now add the Tomatoes, the Stock and the Sage and bring the soup to the boil. Cover and simmer for 15 mins. Now add the Savoy Cabbage and the Green Beans to the pan. Re-cover and simmer for a further 15 mins. Add the (haricot) Beans and the Parsley to the pan, stir well and cook for a further 1 minute. Season to taste.

Feeds 4. Serve with fresh crusty bread.

Make yourself a big batch and freeze it..I don't think that your side of the pond or mine have seen the last of Winter just yet :-)

Gregory - i reckon you can blame that on the beans AND the cabbage. And probably the garlic as well :-)
