Strawberry and Apple Jam

Here's another one I made to use up the rest of the Strawbs I picked! Recipe can be easily doubled if you have enough fruit.

To make 3 or 4 1lb jars

You need:

3 Granny Smith apples
500g Strawberries (hulled and halved or quartered if they are big)
750 ml Water
1/4 cup Lemon juice
1kg Jam Sugar (from the sugar aisle in the supermarket)

Peel the apples and remove the cores. Cut into quarters and then into thin slices. Place in preserving pan or the largest saucepan you've got, together with the strawberries, water and lemon juice. Bring slowly to the boil and then simmer for 20 minutes.

Add the sugar to the strawberry mixture. Increase the heat and stir gently to dissolve the sugar. Continue to boil until setting point is reached. Or, boil until it reaches 220f/105c and then carry out a setting test

Remove from the heat and spoon into sterilized jars. When cool, label and store in a cool, dark, dry place
