One Pot Chicken and Chorizo

Nice easy one today....you can make this all in the same pot. Serve it with crusty bread or rolls.

You will need:

4 Large Chicken Breasts (cubed into bite sized pieces)
1 Large Onion (sliced)
2-3 cloves Garlic (chopped)
2 x 400g tins of Chopped Tomatoes
150g Chorizo sausage (diced or sliced - up to you)
750g New Potatoes (or any other small potatoes)
3/4 pint Chicken Stock
65g Black Olives (sliced)
1 dessert spoon Cornflour
2 tablespoons Olive Oil

Gently heat the olive oil in a large pan and then add the onion. Fry on a gentle heat for 5 minutes until softened.









Add the Chicken and stir until browned. Add the Garlic, Chorizo, Tomatoes, Chicken Stock and Olives. Stir well to combine then add the Potatoes.








Cover and simmer for 15-20 minutes, then remove the lid and simmer for a further 15-20 minutes until the Chicken and Potatoes are cooked through and tender.


The sauce will be a little watery so you need to thicken it slightly. Put the Cornflour in a glass or cup and add the same amount of water. Mix together to form a thick paste. Stir the paste into the Chicken/Tomato sauce. It will thicken slightly. Not into a thick sauce, but just right for dunking your bread into!
