Guacamole

Nope, it doesn't taste like face cream. It's good for serving with tortilla chips and salsa, or as an accompaniment for Nachos or Tacos.....make most of this in a hand blender or a food processor to save time. You can make this in about 10 minutes, and trust me..it's MUCH better than that mush you can buy in jars in the shops.

5-6 Spring Onions trimmed to about 2 inches length
2 large ripe Avocados (i use Hass ones), halved and the insides scooped out.
1 tablespoon Lime juice
bunch Coriander (chopped)
salt and pepper
few drops of Tabasco
2 cloves of Garlic
2 tablespoons of Sour Cream
3 medium sized Tomatoes

Put the Spring Onions and the garlic in the blender and whiz until finely chopped.

Add the Avocado and whiz again until well blended.

Add the Lime juice, and the Tabasco and give it another quick blitz. Place the mixture into a bowl and set aside for now.

Put the whole tomatoes into a bowl and cover with boiling water for 3 or 4 minutes. Remove them from the water and the skins should now come off easily. Cut them in half and scoop out and chuck away the seeds, then finely dice the tomatoes.

Add the chopped Tomatoes and the Sour Cream to the Guacamole and stir it well. Add half the chopped Coriander

Either serve this right away, with the remaining Coriander either stirred in now or sprinkled on top OR store it in the bowl, in the fridge covered in cling film. It should keep ok for a good couple of hours. Add the remaining Coriander before serving.

Makes 4 decent sized servings.
