BBQ Pulled Pork

Nice easy one tonight...takes a long time to cook, but it's all done in the slow cooker.

4 lb pork shoulder, boned or not...doesn't matter
2 Onions, sliced, and divided into 2 portions
1 Onion, chopped
2 cups water
1x bottle of your favorite BBQ sauce - I used Cattlemans
salt and pepper

Place one sliced onion at the bottom of the Crock Pot or Slow Cooker.
Place the Pork Shoulder in the slow cooker on top of the sliced onion. Cover with the second sliced onion and then add enough water to fill the Slow Cooker two thirds of the way up.
Cover and cook on a low heat for 8 to 12 hours.
Remove Pork from slow cooker.
Remove any bone and fat from the pork as well as any water, onions and fat remaining in the pot.
When the pork is cool enough to handle, use a fork or your fingers to pull it apart until the entire joint is well shredded.
Return the shredded pork to the slow cooker and mix in the chopped onion and the BBQ sauce.
Cook on high heat for 3 hours or until onions are softened.

Serve this up on crusty rolls, with homemade coleslaw and dill pickles.
